Christa’s Welcome to the World Cookies

cookies for new mums

Recently on MamaBake, we asked what would mums take new mums? We had some amazing responses and one MamaBaker, Christa D’Orr, said she would always take new mums her Welcome to the World cookies. We asked her to share and so she did.

Ingredients

1/2 cup softened butter
2 eggs
1 tsp vanilla
3/4 cup plain flour
1 cup rolls oats
1/2 tsp bicarb soda
1/2 tsp salt
1/2 cup brown sugar
white sugar (instructions for this below)
1/4 cup craisins
1/2 cup pecan nuts, chopped
1/2 cup dark chocolate chips

Note: to measure the sugar: measure 1/2 cup brown sugar. Leave this in, and then top up with white sugar to the 2/3 cup measure)

Method:

Preheat oven to 180c.  Line a tray with baking paper.
In a mixing bowl, beat together butter, egg and vanilla until fluffy. Add remaining ingredients and mix together by hand until well blended.

Drop heaped teaspoonfuls of the lovely mixture onto the cookie tray.  Bake for 10 minutes until edges are slightly brown.  Cool for 5 minutes before moving onto a wire rack to finish cooling.

Christa also has another variation on this lovely new mum cookie recipe (see below) where she didn’t have all her usual ingredients so substituted in what she had in her cupboard at the time. We reckon they still look amazing!

Christa’s beautiful cookie recipe

Ingredients

1/2 cup melted butter
1 tsp vanilla
2 eggs
3/4 cup plain flour
1 cup rolled oats
1/2 tsp bicarb soda
1/4 tsp salt
1/2 cup coconut sugar
1/4 goji berries
1/2 cup golden raisins
1/4 cup sunflower seeds
1/4 cup pepitas
1/2 cup dark chocolate chunks/chips

Method

Preheat the oven to  180c and line a baking sheet with baking paper or grease.

Melt the butter and stir in the vanilla.

In a big bowl, whisk the 2 eggs, add all dry ingredients, then the wet and stir well.

Pop spoonfuls of the cookie mixture on baking sheet.

Bake for 10 minutes, cool on a wire tray and serve.
