Coconut Banana Bread: Gluten free, Grain Free, Refined Sugar-Free


2 overripe bananas (or 1 cups worth), mashed
1/4 cup coconut oil, melted
4  eggs, whisked until fluffly
4 fresh dates, pitted and chopped
1 tbsp maple syrup or honey
3/4 cup coconut flour
1/2 tsp baking powder
1/4 tsp sea salt
1/2 tsp cinnamon powder


  1. Preheat oven to 175C. Grease and line a loaf tin with baking paper.
  2. Stir in the chopped dates with the mashed bananas.
  3. Fold eggs into the mashed banana and date mix.
  4. Stir in the oil and maple syrup / honey. Add the dry ingredients and combine well.  
  5. Pour/spoon the mixture into the loaf tin. The mixture will be quite thick so flatten the top with a spatula.
  6. Place in the centre of the oven and bake for about 40 minutes or when a knife comes out clean and the edges are browned. Allow to cool completely on a wire rack before storing in an airtight container in the fridge. Or eat while still warm!
