Lunch Box Recipe: Lamb & Feta Burgers

There is something about lamb and Spring that just goes together and these great little burgers are fabulous for dinner and great to take on family outings.


500 grams lean lamb mince

1 cup wholemeal breadcrumbs

1 egg

1 teaspoon onion powder

1 teaspoon mixed dried herbs

1 spring onion, finely chopped

100 grams feta cheese


Fry the onion in a little olive oil, set aside.

In a bowl combine the lamb mince, bread crumbs, egg, onion powder, dried herbs and spring onion.

Mix together really well.

Chop the feta into 1 cm sized pieces and add to the mixture.

Roll into rissole balls, including a little feta in each one.

Place these into a freezer proof container, separated with baking sheets.

Seal, label and freeze until needed.

To cook:
remove from freezer and cook in a hot frying pan with olive oil, make sure you turn each a few times and make sure they are fully cooked right through.

Serve as is or with a fresh garden salad or in buns.
