Italian Simmer Sauce: Big Batch Recipe

Simmer Sauce

This sauce is just simply a mum’s best friend. You can use it as a pasta sauce, pasta bake sauce, pizza base, in a sausage roll, through it over cooked vegetables or chops, so many things!
And it is kid friendly and packed full of veggies!


  • 8 x tins tomatoes chopped
  • 4 x 500ml jars passata sauce
  • 1 cup loose, fresh basil leaves
  • 4 large brown onions
  • 12 cloves garlic, very finely chopped
  • 4 teaspoons fresh thyme leaves
  • 4 large zucchinis, diced
  • 4 large carrots, very finely chopped
  • 4 red capsicums, diced
  • 4 cups broccoli, very finely chopped
  • 4 cups water
  • 4 teaspoons brown sugar
  • Salt and pepper to taste


  • Fry onions and garlic together until slightly translucent. Add in carrots, zucchini, capsicum and cook until lightly softened. Remove from heat.
  • In a really deep saucepan, (you may need to split the mixture over 2-3), add a little oil and the onion and vegetable mixture.
  • Pour in the tinned tomatoes, vegetables, passata sauce and water. Add in sugar and season.
  • Bring to the boil and then reduce to a simmer.
  • After about 20 minutes of simmering add in the thyme and basil leaves. Shred the basil roughly as you add it in.
  • If you need to add a little more water at this stage – do so.
  • Continue to simmer for another 20 minutes or until all vegetables are soft and cooked right through.
  • Taste and season if needed.
  • Remove from heat and allow to cool then store in the fridge until cold.
  • Take out of the fridge after a couple of hours and it is cold.
  • Blitz in a food processor until the mixture is really smooth.
  • Freeze into batches, label.


  • Try using this sauce over pasta, in a pasta bake, lasagne, cannelloni, as a pizza base all sorts of things!
