Vegetable Pancakes

2 cups of mixed veg, grated e.g. carrot, zucchini, red capsicum and you can add a small tin of corn
1 cup of SR flour
1 egg
A little milk (optional)

  1. Put flour in mixing bowl, make a well in the centre.  Add the egg and milk and whisk until all ingredients are blended well. Add a little milk if you need more ‘wetness’
  2. Heat a frying pan (medium heat), add a little oil and spoon about 1 tablespoon of the mixture into the pan.  Flip once cooked on one side.  Cook until golden brown on both sides.

To serve:

Serve with bacon, haloumi or smoked salmon on the side. But if my kids are truely “hangry” I just get them to stand next to the me with their plates and pop them straight on as they are done.

Thanks Justine!
