Sarah’s Tailgate Chili! Big Batch Recipe!

This is a firm family favourite of MamaBaker, Sarahs!  Here’s what she says about it:

“You will need a stock pot for this or you can use a couple slow-cookers but cook all day as it will taste better the longer it cooks. If you like/don’t like spicy food you can adjust the chili powder and Tabasco for hotter/milder chili. Excellent winter food and freezes well.”


1kg mince
1/2kg sausages with skin off or sausage mince (I like the herb and garlic ones but any will do)
1 red capsicum and 1 green capsicum seeded and diced
2 green chilies seeded and diced
x4 400g cans Mexican chili beans (near the canned tomatoes at Coles)
2 cans diced tomatoes
x1 140g tin tomato paste
1 diced onion
250g diced bacon
4 beef stock cubes
1 Tbsp chili powder
1 Tbsp Worcestershire sauce
1 Tbsp minced garlic
1 Tbsp oregano
2 tsp cumin
2 tsp Tabasco sauce
1 tsp basil
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp sugar


Brown the mince and sausages. Add everything else, stir until combined and cook on low for 2-3 hours.

    What size tin of tomato paste? And will plain red kidney beans work? What exactly are chili beans? Thanks

      Hi Amy! The tin is 140g. Plain kidney beans will work though not as flavour full as if you were to use the chilli beans. Chilli beans are tinned kidney beans with extra flavouring. We are sure though if you wanted to use plain kidney beans you could bump up the flavour using extra spices and seasoning. Let us know how it goes!
