Basic Sweet Potato Hash Browns : easy

I don’t know how it happens, I always buy sweet potatoes and then promptly forget about ’em.  This recipe is perfect for those forgotten dear sweet potatoes.  Grate them, mix them and fry them and bang, you have an afternoon tea snack, breakfast egg accompaniment or a lunchbox addition.  You can get pretty creative with these and grate in whatever you have lurking in the fridge; a great leftovers recipe.

If you are MamaBaking, these would be great bulked up with some feta and freshly chopped herbs. But go crazy and add whatever you feel.


4 large sweet potatoes, grated
1 large onion, grated
4 eggs, lightly beaten
3T flour
Salt and Pepper


  1. Mix everything together, well.
  2. Heat a heavy bottomed pan with some oil on a medium hot heat.  Drop in a rounded tablespoon of the sweet potato mixture and press flattish with the back of a spoon. Flip when brown on one side, repeat to do the other.
