Nigella’s Parmesan Shortbreads – Perfect NYE fare!

I am so pleased that I decided to flip on the telly the other night.  I got to watch the gorgeous Poh Ling Yeow and her Christmas special, and then the visual feast that is Nigella Lawson’s Italian Christmas.

You’ll be hard pressed to find an easier canape or nibbly to whip up for your NYE shindig.  In fact, you could do this with your first champers of the evening in hand!

Cruncy, salty, rich and delicious; serve these with assorted cheeses, dips and a nice cold beer!


(makes 100 coin sized bites)

300g plain flour

150 g parmesan cheese

200g butter – softened

2 eggs

In food processor, combine the flour, eggs, parmesan cheese and butter.

Pulse until the mix forms a dough

Remove onto a wooden board and knead lightly.

Divide mix in 2.

Roll each half into a thin log – around the diameter of a $1 coin.

Wrap in cling film and put in the fridge for around 45 minutes.

Unwrap and slice into coin sized discs – around 25 per roll.

Bake in a pre-heated 180 degree C oven for 15-20 minutes or until the discs begin to go golden.

Cool and serve.
