Broccoli Cheese Muffin Slice: School Lunchbox

We had a rainy day out of the blue and the kids have been pretty poorly so decided to do a spot of baking.  We were all craving some comfort food and shortly after making some classic melting moments decided on something with broccoli and cheese – what a combo.  Yummy.

We decided to experiment a little and whizz together a savoury muffin slice using broccoli and cheese.  And we were rather delighted with the results!

Super easy, great for lunch boxes and for snacks.


225g self raising flour
75g butter, melted
175ml milk
1 egg, beaten
100g broccoli, finely chopped
100g cheese, grated.



Preheat oven to 180degC and grease a lamington tray

Sift the flour and baking powder together in a bowl. Stir through all other dry ingredients e.g. broccoli and cheese.

Melt the butter and let cool a little. Add milk and egg.  Add wet to dry ingredients and stir until just combined.  Pour mixture into your prepared lamington tray. Bake for about 20-30 minutes until golden brown on top and cooked through.  Cool on a wire tray, slice and serve!


  1. Can you please confirm; is that self raising flour plus extra baking powder?

    I made this recently and it turned out well. I added some ham. I found the broccoli a little overpowering so might try mixing it with something else or adding some semi-dried tomatoes.
