Make Ahead Turkey Burgers

Burgers can be a mum’s best friend – you can make up the mix ahead of time and simply roll and cook when you’re ready for them or cook them all up in one hit and freeze.

Ingredients

1 kilo turkey mince

1 zucchini

2 rashers bacon

¼ lemon, juiced

1/4 teaspoon chilli (optional)

2 teaspoons garlic paste

Salt and pepper to taste

Fresh salad greens

1 raw beetroot

2 tomatoes

Sugar-free tomato sauce

Method

Sauté the onion and garlic 1-3 minutes or until slightly translucent, tip into a large mixing bowl.

Cook bacon until crisp. Drain on paper towel. Chop into shreds.

In the large bowl add the mince, season with some salt and pepper, add the lemon juice and chili and zucchini.

Mix together well.

Form the mixture into patties.

Fry the patties in the frying pan, a batch at a time, turning and making sure they are browned each side but also cooked all the way through.

Allow to drain and cool on paper towel.

Place into zip locked bags, label and freeze.

In a large ziplock bag add the salad greens, label Turkey Burgers.

Peel and grate the raw beetroot, place into a container or ziplock bag, label turkey burgers.

To serve

Cook patties from frozen on a high heat, make sure they get really hot all the way through, especially the middle.

Chop the tomatoes into small wedges.

Serve with the tomato sauce on top of the bed of salad greens, grated beetroot and tomato wedges.
