Coconut Flour Choc Chip Biscuits

Home made gluten free choc chip biscuits using coconut flour as a substitute for normal flour.  Let us know how they go in the comments below!

Ingredients:

1 cup coconut flour

1/2 cup melted and cooled coconut oil

3 tablespoon honey

4 eggs

1/2 teaspoon vanilla extract

Pinch of salt

1/2 cup shredded coconut

3/4 cup choc chips (dairy free if needed)

Method:

Preheat the oven to 180 degrees and line a baking tray with parchment

In a small saucepan, melt the honey and the coconut oil until runny.

Pour the oil/honey mix inot the eggs, vanilla and salt and mix well.

Stir through the flour, coconut and choc chips.

Using a Tablespoon as a guide, shape the mix into rounds, line them up in your tray and press them gently with the back of a fork.

Bake for about 15 minutes or until golden.

Allow to cool then devour!
