Spinach, Feta and Sweet Potato Cakes : big batch recipe

These are one of those super diverse recipes that you can cook up, swap at a MamaBake session or just have in the fridge for when the hunger pangs strike.  Great for lunch boxes too.  You could add some bacon for extra oomph too if you liked.

Ingredients

(big batch recipe makes about 12)

Approx 2kg potatoes and sweet potatoes (you can use just sweet potatoes if you like)
3 eggs
2 tbspns plain flour
1 teaspoon garlic, crushed
1 tsp sea salt
A good grind of ground black pepper
250g steamed spinach, well squeezed and chopped
200g feta, finely diced
vegetable oil, for shallow frying.

Method

Boil the potatoes until tender, set to one side to cool. When cool diced into small cubes.
Transfer to bowl and mix all ingredients together.
Heat a heavy bottomed pan over a medium heat, add oil and when hot, add a handful of the potato mix (shaped into a patty) and fry until golden brown on both sides.  Repeat until all done.

    Really simple to make. My sweet potato was pretty mushy which, I think, helped the patties to stick together. The first few broke apart but I really squished the others before frying and they were all good. I added cooked finely diced bacon & some dried oregano for an extra boost. Yummy! Made at least 20 decent sized patties.
