Zingy little, tart bites of tangy goodness!

Just be sure and keep these in the freezer as the topping goes a touch runny if left in the fridge!
For the Bars:
1 cup cashews
1 cup fresh dates
1 T vanilla extract
Zest from half a lemon
Zest from a small lime
Juice of half a lemon
Juice of one small lime
1 cup dessicated coconut (un-sweetened)
for the bars:
Process the nuts to a fine flour in a food processor, then add the dates, vanilla, citrus juice and zest. Blitz to combine to a sticky dough.
Add the coconut and the salt to the processor and blitz again.
Press the mix into a square baking dish (lined) and put in the freezer while you make the topping.
For the Strawberry Chia topping:
1 cup strawberries
2 T honey
1.5 T chia seeds
Mash the fruit and stir in the chia and honey.
Spread over the top of the citrus bars and freeze to set.
