The banana and wholemeal flour makes them a bit healthier than regular pikelets, but they are fluffy and you can’t really taste the banana in them, so you can serve them just like regular pikelets. I like them with butter and jam, or with just a drizzle of golden syrup.

Ingredients:

(makes around 48 pikelets)

2 cup wholemeal self raising flour

3 cups purée banana

1 cup milk

4 eggs

2 tsp bicarbonate soda

2 tsp cinnamon

2 tsp vanilla

Method:

Whisk wet ingredients together in a bowl. Combine dry ingredients in a separate bowl. Pour wet ingredients into dry and combine.

Heat butter or coconut oil in a frypan and drop spoonfuls of the batter into the pan.

Cook on low heat until bubbles form, then flip and cook other side for a few minutes.

Served with sliced bananas, natural yoghurt and homemade jam.
