In the meantime, here is her go-to big batch on a budget recipe which looks perfect for a MamaBake session!
1 cup of red lentils
4 cups chopped/grated vegetables
2 cloves of garlic chopped
1 large onion diced
2 heaped tablespoons tomato paste
800g diced tomatoes
Dash of mixed herbs
2 tablespoons olive oil
Fry onion and garlic in olive oil until transparent, add the rest of the ingredients. Bring to a gentle simmer and cook until the lentils have broken down.
Serve with pasta or rice with Parmesan and salt and pepper to taste.
