This is my go-to easy meal that I always whip up when I am having an ‘I can’t be bothered’ kind of day. Although it has an Indian influence it is very mild and the kids gobble it up without complaint.
This recipe easily makes enough for dinner that night and enough to freeze for another day. It is delicious served with rice, cauliflower mash, on top of jacket potatoes, pasta, polenta, on toast…..basically however you like it!
1 kg lean mince
2 brown onions, diced
2 medium carrots, diced
4-5 cloves of garlic, crushed
5 Tbsp. olive oil
2 tins of diced tomatoes
2 dessert spoons of tomato paste
1 ½ cups of frozen peas.
2 tspn ground cumin
2 tspn ground coriander
1 tspn ground turmeric
1 tspn paprika
1-2 tspn salt (as desired)
Black pepper, to taste
1 tspn ground garam masala.
Heat oil in saucepan over a medium –high heat. Add onion and garlic and cook for 2-3 minutes and add mince, stirring with wooden spoon to break the mince up, until browned.
Add spice mix to pan and cook for 5 minutes (add a little bit of water if too dry).
Add tinned tomatoes, tomato paste, peas and stir to combine. Season with salt and pepper. Add 2 cups of water, cover, bring to the boil and then turn heat down and simmer for approx. 20 minutes or until the sauce resembles a gravy like consistency. During the last 5 minutes of cooking stir in Garam Masala.
