Chocolate Chip Cookies: dairy free/grain free/gluten free

Ingredients: Cookie Dough

½ cup coconut oil or cacao butter or half and half
¾ cup packed coconut sugar (can use maple syrup, just use less)
¼ teaspoon salt
1 tablespoon pure vanilla extract
2 tablespoons water
1 ¼ cups almond meal
1/3 cup cacao choc chunks or mini choc chips

Cookie Dough Method:

Mix everything together in a bowl until a slightly sticky dough forms. You might need to add a bit more of this and that to get the consistency right. pop it into the fridge for 10 mins or until firm enough to roll into balls.

Chocolate Coating

Chocolate Ingredients

3-6 heaped Tbs cacao powder (cocoa powder or melted good quality dark choc works fine)

2-3 Tbs coconut oil or cacao butter or both (i find the cacao butter stays firm out of the fridge better than the coconut oil. i buy my cacao butter online)
1-2 Tbs maple syrup, agave or coconut syrup (or to taste)
1-2 Tbs Maca powder.

Method

Melt the coconut oil and or cacao butter in a saucepan. Once melted, whisk in cacao powder, sweetener and maca powder until smooth (it should be the same consistency as melted chocolate)

Method:  Finish your cookie bites

Take the dough out of the fridge and roll into small balls (or whatever size you desire!). use a spoon or fork to drop cookie dough bites into the chocolate, place on a tray lined with baking paper or into mini patty pans and place in fridge or freezer to set
