dairy free chocolate truffles

‘Caramel’ Ingredients

10 large Medjool dates
1-2 Tbs tablespoon Almond butter (or nut butter of choice)

Method

In food processor, blend dates until smooth. Once smooth add in the nutbutter and blend to combine. Place in fridge or freezer for 10-15 mins or until firm enough to roll into balls.

Chocolate Ingredients

3 tablespoons organic coconut oil
5 tablespoons raw cacao powder
2 Tbs Maple syrup (or 1 tablespoon agave)
You can also add Maca Powder, Chia seeds, hemp seeds, flaxmeal etc

Method:

Melt coconute oil in a pan, whisk in cacao powder and other ingredients until smooth and semi thick.

Roll date/nutbutter mixture into balls and use a spoon or fork to drop into chocolate. Place on lined baking tray or in mini patty pans and place in fridge until set. store in fridge.

Note: These will keep for a REALLY long time!
