Banana Pancakes big batch recipe dairy and egg free

Ingredients

4 tablespoons chia seeds in 16 tablespoons of water until the seeds go gelatinous
4 overripe bananas, mashed
2.5 cups your choice milk e.g. nut/soy/coconut etc
5 cups heavy flour e.g. rye/buckwheat
1/2 teaspoon baking powder
1 teaspoon cinnamon

Method

After you have soaked your chia seeds and they have gone all gooey and thick, mix everything else all together.
Heat some oil (coconut’s good) in a heavy bottomed frying pan over a moderate heat spooning in the mixture as you would with ‘normal’ pancakes and away you go!

Keep the mixture in the fridge in a sealed container for hunger emergencies.

After being so very good, slather with maple syrup, berries and all manner of other deliciousness!
