Here are 4 delicious, healthy snacks you can make out of 1 tin of chickpeas that the kids can take to school in place of nut snacks.

 

Maple Syrup Roasted Chickpeas

400g tin chickpeas drained, rinsed
1 tablespoon olive oil
2 tablespoons maple syrup
Pinch of salt

Honey Cinnamon Roasted Chickpeas

400g tin chickpeas drained, rinsed
1 tablespoon olive oil
1 teaspoon cinnamon
2 tablespoons honey
Pinch of salt

Gently Spiced Chickpeas

400g can chickpeas, drained, rinsed
2 teaspoons sweet paprika
1.5 teaspoons ground cumin
1/2 teaspoon salt

Lemon and Black Pepper Chickpeas

400g can chickpeas, drained, rinsed
1 tablespoon olive oil
1/4 teaspoon black pepper
Zest of 1 lemon
Good pinch of salt

Method: Sweet 

  1. Preheat oven to 200degrees C and cover a baking tray with baking paper.
  2. Once you have rinsed your chickpeas, make sure you dry them really well (for extra crunch factor!).  You can dry them by popping them betwen layers of kitchen towel paper and blotting them.
  3. Scatter your chickpeas across the baking papered baking tray and get rid of any skins that you can.
  4. Pop the tray in the oven to dry roast for about 30 minutes. Every ten minutes give the baking tray a good shake to ensure the chickpeas are cooking evenly.
  5. While they are cooking, mix together all your ingredients in a big bowl (except the lemon zest recipe – leave the zest until they have finished cooking and then add them to your chickpeas)and when there is just five minutes left of dry roasting time, pop all the chckpeas into your seasoning bowl.  Mix it all up until the peas are well coated then put the chickpeas back onto the baking paper and tray and then back into the oven for 5 more minutes of cooking.  After 5 minutes, take them out, cool and either eat straight away, keep in the fridge for ongoing snacks or you can freeze them until you need them.

  1. Preheat the oven to 200°C .
  2. Pop the chickpeas in a large bowl and mix with spices and oil.  Spread the chickpeas out across your baking tray (lined with baking paper) and bake until crunchy looking (about 30 to 40 minutes).
