3/4 cup vegetable oil
1 cup caster sugar
4 teaspoons of lime juice
Grated rind of 2 limes
2 cups gluten free self raising flour, sifted
1 teaspoon xanthan gum
1/2 teaspoon salt
1 cup natural yoghurt
Preheat oven to 180◦c.
Grease and line a round cake tin
Using a fork, mix the eggs, oil, caster sugar, lime juice and rind.
In a separate bowl, add the gluten free self raising flour, xanthan gum, salt and yoghurt.
Add the egg mixture and mix well to combine.
Pour into the prepared cake tin and bake for 40 mins.
You can serve as is, or top with icing. I did a simple 7 T icing sugar dissolved in the juice of 1 and a half limes. Some other suggestions from our amazing community on facebook are:
